🌾 The Ingredients
This recipe combines a savory, onion-flecked cornmeal base with tangy liquids and a subtle hint of heat to create a complex flavor profile that pairs perfectly with bright citrus and a zesty, creamy finish. Find ingredient notes (including substitutions and variations) below.

📝 Ingredient Notes and Substitutions
- Self-Rising Flour: This provides the structure and a head start on leavening. If you only have all-purpose flour, you can make your own by whisking 1 cup of flour with 1 ½ teaspoons of baking powder and ½ teaspoon of salt.
- Cornmeal: Yellow cornmeal is classic for its golden color and slightly nutty flavor, but white cornmeal works perfectly if you prefer a more delicate taste.
- Buttermilk: The acidity in buttermilk is essential for a tender crumb and reacts with the leavening agents. In a pinch, mix 1 cup of regular milk with 1 tablespoon of lemon juice or white vinegar and let it sit for 5 minutes.
- Beer: The carbonation in the beer acts as an extra lifting agent for a lighter, airier hush puppy. A light lager works best, but you can substitute it with club soda or extra buttermilk if you prefer to avoid alcohol.
- Chopped Onion: Finely mincing the onion ensures it softens during the quick frying process. For a milder or more colorful twist, try using shallots or thinly sliced green onions.
- Peanut Oil: This is the gold standard for frying due to its high smoke point and neutral flavor. If you have a nut allergy, vegetable oil, canola oil, or grapeseed oil are excellent substitutes.
- Hot Sauce: A few dashes won’t make these “spicy,” but it will enhance the other flavors. You can substitute this with a pinch of cayenne pepper or omit it entirely if you are sensitive to heat.
- Sugar: This helps with browning and balances the savory onion. You can adjust the amount to your preference or swap it for honey for a different depth of sweetness.

🔥 Tips and Tricks for Perfect Hush Puppies
- Monitor Your Oil Temperature: Use a deep-fry thermometer to keep the oil between 365°F and 375°F. If the oil is too cold, the hush puppies will soak up grease and become heavy; if it’s too hot, the outside will burn before the inside is cooked through.
- Let the Batter Rest: After mixing, let your batter sit for about 5 to 10 minutes. This allows the cornmeal to hydrate and the leavening agents to activate, resulting in a fluffier texture and a batter that holds its shape better.
- Don’t Overmix: Stir the wet and dry ingredients together until just combined. Overworking the batter can develop the gluten in the flour, leading to a tough, rubbery hush puppy rather than a tender one.
- Fry in Batches: Avoid crowding the pot. Adding too many hush puppies at once will drop the oil temperature significantly. Fry just a few at a time so they have plenty of room to roll around and brown evenly.
- The “Test Puppy” Method: Always fry one single hush puppy first. This allows you to check if the oil temperature is right and if the seasoning in the batter is to your liking before committing the whole batch.
- Drain on a Wire Rack: Instead of placing fried hush puppies directly onto paper towels (which can trap steam and make the bottoms soggy), let them drain on a wire cooling rack set over a baking sheet. This keeps them crispy on all sides.
- Keep Them Warm: If you are cooking a large batch, keep the finished hush puppies in a 200°F oven on a wire rack to stay warm and crunchy while you finish frying the rest.
👩🏼🍳 How to Make Southern Hush Puppies

- Step 1: In a large bowl, whisk the flour, cornmeal, sugar, and salt together until combined.

- Step 2: Add the onions to the dry mixture and stir to combine.

- Step 3: In a medium bowl, combine the buttermilk, egg, and hot sauce. Whisk into the dry mixture.

- Step 4: Whisk in just enough beer until the batter comes together. Mix until just combined. Let the batter rest for 5 minutes.

- Step 5: Working in batches, drop spoonfuls of the batter into 350°F oil.

- Step 6: Fry until golden. Let drain on a baking rack on a baking pan. Continue with the remaining batter until all hush puppies are fried. Keep them warm in a low-temp oven (220°F).
Expert Tip:
Don’t overmix the batter! Don’t worry if the batter is a little lumpy. This is good! It will make the texture of the Southern Hush Puppies exactly the way you want them! Fluffy and moist on the inside!
🍽️ How To Serve
- The Classic Duo: Serve these immediately while hot with plenty of homemade tartar sauce for dipping and fresh lemon wedges on the side to cut through the richness of the fry.
- Seafood’s Best Friend: These are the traditional accompaniment to a classic fish fry. Pair them with fish ‘n chips, fried shrimp, or a Southern-style crab cakes.
- The BBQ Platter: Use them as a side dish for pulled pork, smoked Texas brisket, or St. Louis-style ribs. They act as the perfect “bread” component to soak up extra BBQ sauce.
- The Ultimate Appetizer: Serve them in a paper-lined basket as a starter. For a fun twist, offer a variety of dips like Cajun remoulade, cocktail sauce, or even a garlic basil aoili.
- Southern Comfort Sides: Complete the meal by serving them alongside other Southern staples like creamy coleslaw, baked beans, or the ultimate mac and cheese.
- Garnish for Flair: Sprinkle the hot hush puppies with a tiny bit of extra sea salt or finely chopped fresh parsley right as they come out of the oil for a professional, restaurant-style presentation.
- Keep it Hot: Hush puppies are best enjoyed within minutes of frying. If you aren’t serving them immediately, keep them in a warm oven to maintain that signature crunch.
🙋🏽♂️ Frequently Asked Questions
Legend has it that hunters or fishermen would toss bits of fried cornmeal batter to their barking dogs to keep them quiet during outdoor cookouts, literally telling the dogs to “hush.”
While these are best enjoyed fresh from the fryer, you can reheat leftovers in an oven or air fryer at 350°F for a few minutes to restore their signature crunch. Avoid the microwave, as it will make them soggy.
This usually happens if the batter is too thin or if the oil isn’t hot enough. Ensure the consistency is thick enough to hold its shape on a spoon and that the temperature has reached at least 365°F before dropping the dough into the pot.
You can, though the texture will be slightly different than the deep-fried version. Lightly spray the rounds with oil and cook at 400°F for about 8–10 minutes, shaking the basket halfway through until they are golden brown.
Using a combination of buttermilk and a carbonated beverage like beer or club soda creates tiny air bubbles in the batter. These bubbles expand during the frying process to create a fluffy interior rather than a dense one.
