How To Make Lazy Day Blueberry Cobbler

The Ingredients You Will Need
The list of ingredients you’ll need to make this delicious dessert is not long and very pantry-friendly. Here’s what you’ll need to have on hand:
Butter – Unsalted is what we recommend.
Sugar – Granulated.
Self-rising flour – See NOTES for other options.
Milk – Whole is best.
Lemon juice – From 1 lemon.
Vanilla extract – Don’t skip this ingredient, it adds a wonderful depth of flavor.
Blueberries – Fresh is definitely best, but, frozen will work, too.
EXPERT TIP: We use our 8″ cast-iron skillet to make this cobbler, but you could use any 8×8″, 9×9″, or even 10×10″ baking dish. Be sure to whisk the batter until smooth and silky. A few small lumps are just fine. Pour directly over the melted butter without stirring.
Tips for Perfect Lazy Day Blueberry Cobbler
Don’t Stir – Once you’ve whisked together the batter, simply pour it over the melted butter. Don’t stir! The butter is pushed to the edges and forms an amazing crust along the edge of the pan.
Use Fresh – Fresh blueberries really do make a difference. Of course, you can go with frozen, but, just remember, fresh is best! See NOTES about other fruit options.
Lest Rest – When the cobble is ready, it is molten hot. For the safety of your guests, you’ll need to let it rest for about 10 minutes. This also allows the cobbler to settle into the pan, which delivers the perfect texture.
How to Serve
This cobbler is best served nice and warm after resting for about 10 minutes out of the oven.
It’s also completely addictive once it becomes room temperature. To reheat, simply place in a microwave-safe bowl and cook on HIGH for about 30 to 60 seconds.
And we can’t express this enough: Vanilla ice cream makes the cobble even better. The melting ice cream almost forms a crystallization with the hot crust. It’s indescribable and irresistible!

Lazy Day Blueberry Cobbler
Equipment
- 8" cast-iron skillet or 8x8", 9x9", or 10x10" baking dish
Ingredients
- ¼ cup unsalted butter ½stick
- 1¼ cups sugar divided
- 1 cup self-rising flour
- 1 cup whole milk
- Juice from 1 lemon 1 to 2 tbsp
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- Vanilla ice cream for serving
Instructions
- Preheat the oven to 375°F.
- Place the butter in your cast-iron skillet (or dish) and place in the oven while it preheats.
- Meanwhile, in a medium bowl, whisk together 1 cup of sugar, the flour, milk, lemon juice, and vanilla extract until smooth.
- Take the skillet/dish out of the oven and swirl the melted butter around to evenly coat the bottom of the pan/dish.
- Pour the batter over the melted butter (don't stir).
- Sprinkle the blueberries evenly over the top.
- Sprinkle the remaining ¼ cup of sugar over the top.
- Bake until golden and bubbly! About 40 to 45 minutes.
- Remove from the oven and let it rest for about 10 minutes. Serve with ice cream and enjoy!
